“Comfort Food for the Mind, Body, and Soul”: BETTER PECAN PIE

I love pecan pie, but it’s always so SWEET! Here’s a recipe that you’ll love, and you don’t need Karo or corn syrup!!

1 cup dark brown sugar
1/4 cup white sugar or Splenda
1 stick butter, melted
2 eggs
1 Tbsp. all purpose flour
1 Tbsp. milk
1 1/2 tsp. vanilla extract
1 1/2 cups pecans (1c. chopped and 1/2 cup whole)

Preheat oven to 350 degrees. In a large bowl, whisk eggs until foamy. Stir in the melted butter. Add the brown sugar, white sugar, and flour. Stir until sugar is dissolved. Stir in milk, vanilla, and pecans. Pour into an unbaked deep dish pie crust. ( I like Mrs. Smith’s pie crusts). Bake at 350 degrees for 10 minutes then reduce the temperature to 300 degrees and bake for 1 hour.Serve with a dollop of fresh whipped cream or Cool Whip!
