Healthy Living: CORN AND AVOCADO RELISH

Living with diabetes does not mean you have to miss out on all the delicious food during the holidays or special occasions. 
 
I have gathered several of my favorite recipes that are all diabetic-friendly and full of flavor so that you and your entire family will enjoy them!!  
 
We all need to eat healthier, so why not start here.  You don’t have to be a Top Chef to make these simple dishes. Grab your pots and pans and let’s go!!

2 cups corn, frozen white kernels
1 avocado(s), Haas or any
1/4 onion(s), red, chopped
1/2 pepper(s), bell, red, chopped
1/4 cup cilantro, fresh, chopped
1/2 cup salsa, fresh, low sodium, refrigerator section
cooking spray
 
Spray a large nonstick skillet with cooking spray and place over medium to medium high heat. Add corn and cook for about 3 minutes until lightly browned, stirring occasionally. Pour the corn into a large salad bowl and allow to cool for about 5 minutes. Add salsa, onion, red pepper and cilantro to the bowl. Toss and chill for 10 minutes before adding the avocado. Peel and cut the avocado and add to the bowl. Toss and serve.
