STRAWBERRY 
BALSAMIC FILET OF BEEF
 
2 cups strawberries, sliced
1/4 cup brown sugar
1/4 cup balsamic vinegar
1 tablespoon olive oil
4 (6 ounce) beef tenderloin filets
salt and pepper to taste
1 tablespoon chilled butter
freshly ground black pepper to taste
 
Mix together the strawberries, brown sugar, and balsamic vinegar in a bowl, and allow to sit for 1 to 3 hours, stirring occasionally.

 PEACH COBBLER ROLLS

 
5 large fresh peaches – peeled, pitted and sliced
2 cups water
1 1/2 cups white sugar
2 tablespoons cornstarch
 
1 1/3 cups buttermilk baking mix
2 tablespoons white sugar
2 tablespoons margarine, melted
1/3 cup milk
 
2 tablespoons margarine, softened
1/4 cup white sugar
1 teaspoon ground cinnamon
 
Preheat oven to 425 degrees. 
In large saucepan over medium heat, combine peaches, water, 1 1/2 cups sugar and cornstarch. Cook, stirring constantly, until mixture boils. Boil for one minute, then reduce heat to low to keep warm.
