1 lb. Ground Chicken
1/4 Cup Blue Cheese Crumbles
2 Tbs. Minced Garlic
2 Tbs. Butter
2 Large Ribs of Celery – Divided
4 Green Onions
1 tsp. Onion Powder
3/4 cup dry breadcrumbs
1/2 Cup Franks Buffalo Red Hot Sauce
Salt and Pepper
Preheat oven to 400*
Dice up one rib of celery to put into the meatball mixture. Cut the other rib of celery into dipping stick size pieces. Chop up the green onions for a garnish.
In a large mixing bowl, combine chicken, blue cheese, garlic, diced celery, onion powder, breadcrumbs, salt and pepper, and 2 Tbs. of the hot sauce.
Mixture will yield 16 decent sized meatballs. Bake in a glass baking dish for 15 minutes on 400*
While the meatballs are baking, heat the remainder of the hot sauce and the 2 Tbs. of butter over low heat until the butter is melted and they are combined.
When the meatballs are cooked, toss them in the Franks until they are nice and coated.
Great as an appetizer or even on top of a caesar salad!
